Serious Hygiene Failings Identified
The inspection report revealed numerous “serious failings” regarding hygiene standards at the bakery. In addition to the discovery of mouse carcasses, inspectors found a lack of control upon receipt of goods and a failure to maintain proper traceability of ingredients. The report also cited a lack of information regarding defrosted products and a complete absence of hygiene training for staff. To reopen, Boulangerie Raoul must address a range of issues, including implementing an effective pest control plan, ensuring proper maintenance and cleaning of production and storage areas, securing electrical installations, and maintaining appropriate refrigeration for eggs. The bakery must also clearly label any thawed products and adhere to established food safety standards.
